What do you feed 17 hungry cyclists while they are riding over 600 miles? Rachel Sanders developed an awesome, healthy menu that meets the variety of dietary needs of the group. Breakfast options include oatmeal, bagels, cream cheese, eggs, cereal, and fruit. Lunches on the road are "make your own sandwiches", everything from ham and cheese to peanut butter and jelly and we didn't forget Nutella! Dinners have a pasta or rice component, a protein, and a veggie or two. To keep all of this organized, Rachel sorted all of the non-perishable ingredients into their own bag or container with the corresponding recipe so the students can just grab the bag and start cooking at the campsite.
